Rye Highball

INGREDIENTS

45mL The Gospel Solera Rye
25mL Orange & Rosemary Cordial
20mL Lemon Juice
2 x Drops Whiskey Bitters (or substitute for Angostura Bitter)
120mL Soda Water
Orange Wedge or Rosemary Twig

METHOD

Pour rye, cordial, lemon and half measure of the soda water required into a highball glass. Add ice to the top, give a gentle stir. Top up with the rest of the soda water. Garnish with an orange wedge and/or fresh rosemary twig. No straws.

ORANGE & ROSEMARY CORDIAL
INGREDIENTS
15g Fresh Rosemary
100g Orange Zest (from approx. 3 oranges)
500g Sugar
1 litre Water
200mL Orange Juice
1 tsp Citric Acid
METHOD
1. Place fresh rosemary, orange zest and sugar into a cooking pot
2. Add water and bring to simmer for 3-4 minutes
3. Add orange juice, cover and leave it for 10 minutes
4. Strain into a bowl using a muslin cloth
5. Once cold add citric acid
6. Bottle and store in the fridge for up to 14 days

MARZO’S NOTES: The Orange & Rosemary Cordial can be made ahead of time and kept in the fridge for up to 14 days. Alternatively, you can substitute the Orange & Rosemary Cordial for store-bought Elderflower Cordial – just omit the bitters. Rye Highball is best enjoyed with food.
